These macro bowls are freaking delicious..yes I know honey isn’t vegan suck it!!
But OMG my lunch was amazing!!
Well…the Brussels turned into rustic blend and the slides into a vegan turkey n cheese wrap with guacamole, lettuce, salsa, raw pumpkin seeds, roasted smoked Thai coconut humus and spinach tortilla
The wrap, humus, cheese and turkey got heated before the other stuff was added!
Wow was dinner good!!
Getting excited for dinner…gonna have Brussels sprouts, fresh oven fries and 2 gardein mini sliders w guacamole, lettuce, vegan cheese and smoked Thai coconut humus!!

Mixed it all up for some yummy cheap healthy dinner…my carnivorous brother added meat but still loved it!
Minus the bocca and sauce which I already had I made 3 HUGE servings for less than $5!!

Vegan turkey and rice cheese sandwich
With some extra spicy red pepper hummus and lettuce on walnut bakeshop bread
I did pan warm the bread and then the turkey and cheese with a 30 second 30% power microwave to help melt the cheese without burning the bread
It was my first time trying rice cheese, not bad at all!!

Juice- intro to greens
Spinach, kale, cucumber, oranges, ginger, apple, heirloom yellow carrots added pineapple
WAS SOOOO AMAZING!!

One pan 20 min
Few Healthy Handfuls Bocca beefless crumbles
1 can ORGANIC sweet corn (rinsed)
1 cup jarred pasta sauce
1 can ORGANIC diced tomatoes seasoned with oil and Italian seasonings
Whole wheat pasta
First I cooked and strained the pasta set aside -10 min including water boiling
In the same pan since its already clean (boiled water!) and hot
Added bocca crumbles and seasoned stired 3 min
Added in both cans and stired let cook for 2 min
Added noodles on top and a bit more seasoning right on the noodles and drizzled with EVOO then stired
Added the pasta sauce at the end stirred in and let sit for 5ish min
Cheap easy and leftovers for lunch tomorrow
2 bocca spicy chicken patties with yellow red peppers and onions and mixed greens with walnut bread
Kinda devoured the berries before I got the smoothie
Mixed berries - blueberries, strawberries, mangos, pineapples
Smoothie - soy milk, banana, fresh peanut butter and hemp protein powder
Could of used a shot of vanilla or a drizzle of chocolate…but it’s healthy!!!!
Sautéed veggies- fresh broccoli, red bell pepper, jalapeño, white opinion, medium tomato, small yellow and green squash, garlic, black pepper
I prepared the “kielbasa” by pre-slicing and sautéed with some oil…they aren’t too bad but VERY salty!!
Added some veggie enriched pasta drizzled lightly EVOO sprinkled oregano and pepper
