I've been working on gradually going from over 350lbs to a healthy new me over 5 years, vegan for a little over 3 years now!!

Dinner time!

Sautéed 2 large portobello  mushrooms, 2 red bell peppers, a medium white onion and a large Serrano pepper drizzle of EVOO, cumin salt and pepper!! 

Mixed with spring greens and Spanish rice and refried beans!!
