I've been working on gradually going from over 350lbs to a healthy new me over 5 years, vegan for a little over 3 years now!!

Tom Kha Tofu

Left- steamed brow rice with sriacha and cilantro

Right- Tom Kha soup with tofu cubes raw button mushrooms a light coconut lemongrass broth added some salt pepper red pepper flakes and garlic to both

Accompanied by a nice sparkling mineral water

It was very good but totally not worth the $7 for the small minimal serving!

Dinner time!

Sautéed 2 large portobello  mushrooms, 2 red bell peppers, a medium white onion and a large Serrano pepper drizzle of EVOO, cumin salt and pepper!! 

Mixed with spring greens and Spanish rice and refried beans!!
