Thai eggplant coconut curry served over brown rice

Not too spicy coulda used sriacha and pepper and salt

Being healthy made my chocolate into silk so it’s “healthier” then a cookie

Mineral water and an Apple

Thai Coconut Curry o deliciousness….hello happy day!! Served with brown rice under all that yumminess

Nice bottle of strawberry lemon Infused water and a chocolate chip cookie (hey it’s been a hellish work week!)

Can’t wait for lunch…Thai tofu curry in the cafe!!

soo since i cant find a vegan thai curry place with decent service and that is acutally vegan..i’ve mastered it on my own!!
Sauteed Firm Tofu
Peanuts
Veggies:
Red Bell Pepper
Carrots
Broccoli
 Zuchini Squash
Green Beans 
Thai Curry
2 cans Organic Thai Kitchen coconut Milk
Thai Kitchen Green Curry Paste (they say use 1 tbsp/1 can I ended up using like way more like almost the entire jar because we love it strong)
Sriacha 
Red Pepper Flakes
Ginger
Tumeric
Lemon Pepper
took maybe 1 1/2 to get it all ready and cook and OMG it was amazing!!!! *thai kitchen brand clearly marks their items as “vegan” on the labels and is reasonably priced!!*
