I've been working on gradually going from over 350lbs to a healthy new me over 5 years, vegan for a little over 3 years now!!

Extra Veggie Soup!!!

Was feeling a bit under the weather so crammed a whole yellow squash and green zuchiini along with the can of Amy’s Soup add a lil seasoning and no more sickly!!

wedfall:

Immune boosting salad!
50g raw pumpkin
70g carrot
70 radish (that big chinese one)
lemon
ginger
grate the veggies, press out liquid
blend ginger and lemon (skin removed)
pour it over veggies and store in fridge to marinate
Health facts:
Lemon is highly alkeline formning and contains C-vitamins, so does carrots and pumpkin. The oils in radish relief sore throat and ginger.. well ginger is just the root to everything good.
You can use this as a base for alot of things, add nuts, other veggies, just it as a side or just as it is, for a pick me up and it’s light in calories.

with no “bubbles” which are gummy tapioca balls…weird texture I cant stomach! 

Saturday Dinner - Whole Foods - ATX South Lamar

One is Spinach tortilla one is a southwest tortilla
Both filled with Vegan Chorizo, grilled veggies, black beans, rice, Daiya mozzarella cheese, cilantro, pico de gallo, tomatoes, salsa verde and a medium red salsa and lettuce

Drink

mmmmazzzing probiotic coconut strawberry drink…I view it as healthy soda, filled with billions of probiotics and coconutty goodness!!!

To top it off with a lovely view from the Whole Foods Roof Deck with some amazing friends <3

Soy softserve vanilla, swirl, and chocolate, topped w fresh chopped strawberrys and pecans soy whipped “cream”, cherries and chocolate syrup stuff between a split banana

Vegan Red Velvet
Vegan red velvet layered with “cream cheese”/coconutty flavor icing..mouthgazmic!!

*I split both of them with a friend so I totally rationalized it*
it was a ME vacation day…so I did splurge a little..hey its vegan and you only live once right ;)

taking a ME vacation day, decided to make some lunch!

Wrap
Spinach Tortillas wrapped up and lightly browned with some garlic infused EVOO
Stuffed with black bean veggie patty sprinkled with Daiya Mozzarella cheese, handful of raw pumpkin seeds and lots of spring greens drizzled with flax seed oil and some spicy vegan mayo

side of fresh organic baby carrots drizzled with spicy vegan mayo 

*spicy mayo- Vegan Earth Balance Mayo and Sriracha, equal parts…or less if not as brave…mixed well*


also had fresh pineapple for dessert!
